I've always heard that charred meats can be bad for you... as in CARCINOGENS!
Well, its true. Here is how you can avoid that at your cook out:
1. Lean meat
2. Low heat
It's the cooking of the fat in the meat that actually forms the PAHs. Leaner cuts of meat + less fat. And using the lower heat settings helps keep the Heteocylic Amines (possible carcinogen)down.
Another tip is to marinate yoru meats. Not only is it tasty, but it also provides a layer of protection from the heat.
